    So what?

    Unless I'm about to start a new job whereby my main task means that I
    breath in particles of dried faeces from infected birds then I can't
    really see too much of a problem.

    I'd quite happily cook and eat the meat of an infected chicken.

    The only thing I would say is be careful about the weight of the
    goose. If it's a bit heavier than the one he uses, you need to add to
    the cooking time, which has a knock on effect on the legs because you
    do those first. Otherwise, it is a very easy piece of cooking and
    tastes fantastic.
