Have a look at the abstract:

The ultrasonic velocity in Cheddar cheese is temperature
dependent. This relationship can be used to make corrections when
determining ultrasonic texture or to determine mean temperatures in
    cooling/heating processes.

And what exactly is wrong with a thermometer?

How do you monitor the temperature of the middle of a cheese without
making it unattractive with lots of worm-like holes?

Considering they may have uses for taking temperature readings of other
substances, which thermometer would you use for something larger, such
    as the earth's mantle/core/etc?

It would only take one fine thermocouple, or even just measuring the
outside. Or come to that, the electrical resitance[1]
Now the Moon it would clearly work for, but the Earth? I think not. In
any event, a long way from cheese. And why not Wensleydale?

[1] I can't believe I'm talking about measuring the resistivity of
    Cheddar Cheese!

Why not? We use a Variac to cook our hotdog sausages in lab (10-15secs@
65-85V). The high power Dummy Load is good for warming pies too.
