    You /thiink/ you're cured - but a couple of days in the freezer and it
    all breaks out again. In any case, you never really lose the
    metaphorical white hat - you'll always take the opportunity to stab a
    glance into the kitchen as the door swings open ... or sit in a bar,
    playing "Spot the cobweb".
    OTOH - why should you never moan too much about the pile of shit in
    the store room? It keeps the flies out of the kitchen.

    I specialised in AP and noise for most of my stretch (well almost
    exclusively noise towards the end). Swapped my white hat for a hard hat,
    ear plugs and safety shoes (and perilously close to being issued with a
    'stab jacket' in recent years), so I am, thankfully, fairly relaxed in
    catering establishments.

    Definition - Expert: someone who knows more and more about less and
    less.
    Much more elegant.

  11. I have packs of bacon in the bottom of the freezer that've been there
    for at least 2 years and the oldest one was quite edible. I eat them in
    rotation, but there's always one that gets missed. The record is a 5
    year old packet of smoked salmon which was fine on thawing out.

  17. The the French dried sossiges that I bought at the French market in
    Swindon at the weekend you mean? The ones that don't require any
    cooling[1] at all because they are cured? The ones that we have eaten
    several of so far and not died of salmonella from?

    And very nice they are too. Especially in the beef stew that we did at
    the weekend. In fact - much nicer in the stew than 'raw' with pickles
    and a jar or two of wine. Mind you the stew was consumed with muc^H^H
    some wine too.

    That sort of curing?

    [1] Well - they are actually hung up in my (air-conditioned) computer
    room at home but thats more of an attempt to make sure that the flies
    don't get at them.

  18. And it's important to note that sometimes killing the bugs won't stop
    you getting food posioning - especially if the bugs have had time to
    breed and infuse the meat with their by-products..
