Yes, most of the champagne producers do tours and tastings.

We can thoroughly recommend Canard-Duchêne's tour: the tunnels are
incredible, and the guide we had was enthusiastic and knowledgeable.

I've been to four champagne houses.

GH Martell (in Reims, not the main site in Epernay) was good. A small tour
followed by a generous tasting. Very good value at 6 Euros.

Mumm in Reims. Very glitzy, alsmost disneyfied. Endless tour. Tight arses
only give you 1 glass at the end. Avoid.

Piersen Whittaker in Avize. They run a Chambre d'hote which is in Sawday's
guide. An Anglo-French couple who make champagne in the cellar of the B&B.
Nice tour by genuine craft winemakers. It would be a really nice place to
stay, except Avize is a dump, with nowhere to eat in the evening.

Chateau Pierry (in Pierry, just down the road from Montmort Lucy). You get
a tour around the Chateau and museum. Then you are taken over to the winery
where you get a really good tasting. It helps to be staying in the Logis
hotel about 10 mins walk away in Moussy. If the gaffer is there then you
will get a demonstration of sabrage.

Mercier, Epernay - little electric train to take you round the miles of
    caves.

    @news.individual.de:

Some are prebook. The GH Martell one mentioned below was run every 2 hours
or so. We turned up just too late to catch one so had to occupy ourselves
for a while. This is not difficult to do in Reims.

Indeed. Posh place, a dozen ukrmers roll in (looking, obviously, not a
little disreputable) and what do we get from the receptionist? "Would
you like to leave your helmets behind the desk here?"
