Can anyone recommend materials and methods for repairing minor scratches on
the rear end plastic of a Suzuki GS500?

The most effective and least time-consuming method is to visit your
Suzuki dealer or a wrecker and buy some new plastic bits.

The cheapest method is to stop looking at the scratches, and pretend
    they're not there.

In such a situation, I usually use option 2. ;-)

.....but if you rub the plastic bits fast enough!
