I think there was a TV program where they got Schumacher to do this to demonstrate how quick his reactions are compared to us lesser mortals.
I remember doing this at school and laughing at the 'slow' kids who completely failed to catch the ruler at all, even after repeated attempts. IIRC I was about average - but trying it again aged 20(ish) after 3 years of driving competitively and thousands of hours playing computer games (such as they were then) I was significantly quicker than most of the others. Can you learn faster responses?
It may be that with greater experience you are picking up on subtle clues and able to anticipate better. There is a lower limit to the reaction time defined by the time it takes the signals to get from eye to brain to hand.
Reinforcing their self image. I think that a significant proportion would be inclined to supply the result they wish they'd obtained/believe they should have obtained. You'd also get the awkward squad putting in stupid results.
