And at a loss to why.

Jean's GSX has been suffering from power loss.
    Symptoms.

Riding , ahem , briskly , and all is going well. Then speed will drop
    sharply.

It is not electric as al lights stay on.
It is not fuel (I don't think) as never happens when bimbling (70ish) and
    only making occasional speed bursts.

The bike continuse running but will often drop to around 50ish for about
1/4 to 1/2 mile and then pick up again.

Looking for idea, maybe heat releated ? if so what is best to attack 1st ?

It may not be anything like the trouble you have, but my bike used to do
the same, and it was eventually traced to the side panel being missing,
and in certain cross winds the wind would blow straight into the air
intake, causing a weak mixture, thus reducing the power.I mentioned it to
a mate who had a R65 BMW, and he had just the same thing in strong cross
    winds.

Sounds like fuel starvation to me. Partially blocked fuel filter, tank
    breather hole blocked?

Air lock in the petrol tank?

    Fuel starvation....

Check fuel filter(s) and the tank air vent. The latter is easily
checked by riding without the filler gap in place, but be careful.

  7. Harry Bloomfield has brought this to us :
Last year I came across a little Honda where the fuel tap had filled up
with gunge, which was restricting the flow.
