If, and it's a big if, someone was considering attaching a redundant
Givi Wingrack to a motorcycle for which there is no fitting kit, what
    would one use?

I was considering a plate on each side, with holes in the right
    places. Nice and easy, surely?

    Any particular material?

    Hard anodised clearly.

Mate of mine brought his entire greenhouse in, in individual sections
over the course of a couple of months to anodise each piece in the BAe
    tank.

When he moved he had to take the greenhouse with him, as it was going
    to be everlasting !

There used to be a "universal" kit with various bits of metal in it.
Depends. Just don't forget the forces that want to twist the
mounting when you hit a pot hole with fully laden bags.
Steel, aluminium is more prone to crack due to fatigue.
