    nearest thing i can think of is polenta with wild boar sausages (a new year
    traditional dish in the alps).

    A touch of the farmyard is certainly involved. Veritable andouillettes
    de Troyes are supposed to be the best. Some, even I struggle with unless
    smothered with plenty of Dijon mustard.
