Hmmm... I suggest to drill a hole in the upper support and use some string
to safely fix the foot of the jamon to it.

 

You can't see it on the pic, but there's a hand=turned screw on the
other side that clamps into the bone, so it is in fact very secure.

 

Not in this case. Was at a local Géant supermarket. Cheap enough
though, at Eu45 for the set, for a 5.5kg ham.

Dom will doubtless be disappoionted to kearn that it's an Aosta ham,
not a Spanish one, but its really rather nice.
