Went to start it, strong turning over, no catching. Jump up and down
in frustration, aim kick at swing am, try one last time, it catches.

Go and put air in tyres, think 'you'd better not mess me around
    again', it starts no problem.

Just shy of 100 miles later, [1] pull into the Tescos just down the
road, come out, not even thinking about the previous issue and it
refuses to start again. Swear, attempt to bump start, get hot and
sweaty, give up, phone Aunty Carol.

Sitting on the bike having a fag get chatting to a bloke about bikes,
how he hasn't got one any more

    'too many kids'

'that's an ideal reason to have one'

He decides that actually he really should get a bike again, I say
'I've obviously broken down just to convince you of this'. As he gets
in the car I try one more time, it starts. Phone Aunty Carol, cancel
    recovery, come home.

So, why is it messing me about? New spark plugs required? If so surely
it wouldn't start with ease sometimes and not at others. Airlock has
    been suggested, any other ideas?

[1] I headed north east rather than my usual west or south west, loads
of roads have lowered speed limits since I was last out that way, road
surface is awful once you get over the border into Notts and the
stomach lurches you get when you think you are about to slide sideways
on a very tight left hander are nowhere near as pleasant as the other
    sorts of stomach lurches.

Sounds like petrol to me - taking a long time to turnover suggests
that the petrol isn't getting in quick enough. As it's turning over
and it does start (eventually) it rules out things like electrics,
    battery, sparks, etc.

I don't think it's an airlock in the breather as it runs fine once
it starts. I would check your petrol filter for blockages, replacing
it if it hasn't been done in a long time. You may also have some
water in the tank from condensation build up over the winter? Remove
tank, drain, let it air for a bit while you change the petrol filter,
give it a wipe round and then refill with petrol.

Also check obvious things like kinked petrol lines from the tank
as it is sometimes easy to trap them when they go back on, but again
it would suggest it not running at all/ dying when on full throttle
    rather than not starting.

That's cool. I can get oil and filter up the road, they keep them in
stock. You'll need a new air filter too while we're at it. You going to
source that, or shall I order one tomorrow from up the road? They aint
cheap cos I doubt there's a pattern one available for your bike.

Air filter is a washable foam one, so not buying a new one. Plugs are
about 36 quid though, so that's taken up the saving on the air filter.
At least they are in stock up the road.

    In communiqué
The trouble with you youngsters is that you have never worked on SO
Italian bikes with true CDI ignition [1]. Never rule out a weak spark
    ignition problem until proved otherwise.

Though fuel ills may well be the most likely diagnosis on a modern bike
    with the symptoms described.

[1] e.g. Morini and early Gilera Nordwest. Both can eventually and
randomly start if turned over long enough and fast[2] enough to get
lucky with a viable spark if the charging coil in the stator is
    sub-optimal.
[2] Which can be a function of battery state or fatigue of kick starting
    leg.
