I've googled and I've searched, but I can't find any information as to
how much and what grade of fork oil an FZ600 takes. Anyone know for
    certain?

    TIA

Whatever grade you fancy putting in the forks surely. Bung in some 30W
for harder damping and 10W for softer damping.

Does it give a height of the oil from the fork top measurement please?

ITYMF that the grading of fork oil relates to the viscosity of the oil,
the higher the number the greater the viscosity. This is to allow
individuals to tailor the damping of the forks to their own requirements
for example the manual recommends 10W for my Bandit however the front
end is too soft and dives too quickly for my liking so I replaced it
with 30W to firm it up a bit which it did.

Although I thought everyone knew that, everyone except you of course YTC.

Yep, 117mm (4.61 inches) this is with the forks fully compressed and
    the spring removed.
