fao FOAK: Chinky Cooling

    the "danger" in this case is that the heat from the hot food warms up
    the air in the fridge to a degree that other contents are affected. I
    doubt this would be a problem with rice, though I wouldn't, say, put a
    hot lasagna in an earthenware dish directly into the fridge.

    It all depends on the quantity of rice. It can take a while to cool
    and I'd imagine that sticking a kilo of rice still at ~40C into a
    fridge would raise the internal temperature of said fridge
    considerably.

    sure. I wasn't thinking of nearly as much as a kilo, mind.
    I guess so - other variables are the size of the fridge/how full it
    is. I currently have a very small "built in" fridge in my kitchen, and
    I'd be wary about putting anything much hotter than room temperature
    into it. The big full-height "beer" fridge I have in the shed, I'm
    less concerned about putting mildly warm things straight into it, as
    it's mostly full of wine and beer.

    I do so frequently and don't beleive the risk to be real. I also used
    to frequently forget to put it in the fridge till the next morning,
    without any ill effects.

    Another question for Pip: What exactly is the end result supposed to
    do? I mean, what's the symptoms of rice poisoning?

    Cook rice (90% cooked), drain and allow to go cold
    Heat oil in pan (with any spices that you might want)
    Meanwhile - beat the egg mixture & add dash of soy sauce
    Once oil is hot pour in egg mixture and stir furiously.
    Once egg is mosly solid add in rice and finish cooking.
    Garnish with chopped mushrooms/chicken/ham as appropriate.

  14. The pre-cooking or the long-grain? Both are OK and the pre-cooking is
    essential.
    Given that it's the method that people like Ken Hom advocates I'll
    carry on doing it their way..

    No, the 'easy cook'. Read the thread.
    You've snipped a lot, but I assume you're referring to the frying of
    the eggs before adding the rice? That's what I said was cheating and
    wrong. In which case I suggest you do what I've just done and consult
    his recipe books.

    I've just read no less than four recipes of his for variations of egg
    fried rice, every single one of which fries the rice in a very hot wok
    for five minutes or more before adding the egg (mixture) and 'continue
    to stir-fry for another two minutes or until the egg is set'.

    Ahh, so you were advocating this method. As I said in t'other post, go
    back and read your Ken Hom and you'll find he doesn't do this.
    And in all the ones I've found, he suggests frying the additions
    first, then the rice, before adding the egg at the last stage.

    Some people seem to be disfoodic, and incapable of the simplest
    culinary tasks. I recall breakfast at Blaney's one time, where he
    seemed genuinely unaware that the fact that the sausages frying on the
    hob were smoking was possibly a sign that they were burning and that
    the remedy to this was to turn down the heat. Wierd, I know, but it
    happens.

    Oh sure. Although it was nowhere near as bad as Andy's, IIRC. Quite
    funny waking him up by starting[1] your bandit 12 after we'd cobbled
    the tank on... with just the exhaust headers in place.
